Smoke generators
Apart from drying and salting, smoking has been one of the long known ways of preparation of long-lasting food. Wooden-chip smoke generator – the smoke is generated by glowing of wooden chip on a special grate. Electric spiral lights the wooden chip to burn. This is the most common means of generating smoke. Smoke contains most of the elements which create the characteristic aroma and color of the products. It enables to smoke a large amount of products at once. The operation is very silent and safe. This device provides for adjustable thickness of smoke while the maintenance costs are insignificant. Hereby you can regulate desired color and aroma. The amount of wood parts in wooden-chips can be changed or spices can be added. This device can be used for hot as well as warm smoking.
Friction smoke generator – Its functioning is very simple. Block of wood is pressed against a rotating friction wheel, whereby heat is created and smoke is generated. The advantage of this device is its quick start and simple manipulation. Only a very low amount of tar is produced. The disadvantage of it is loudness during its operation.
Liquid smoke is frequently used by reason of environment protection. Smoke is generated by atomization of smoke liquid using special nozzles inside the smoking chamber. The system is usually closed. The advantage is lower amount of carcinogenic substances in the smoke. Removal of the smoke is easy and cheap. The disadvantage of this method is price of the smoke liquid.
